• 1 cup corn flour
• 1/2 cup gluten free all purpose flour
• 1/4 cup quick oats
• 1/2 teaspoon baking powder
• 1/2 cup natural peanut butter
• 1/4 cup apple sauce
• 1/4 cup warm water
• plus water as needed to form the dough

Preheat oven to 350°F. Whisk flours, oats and baking powder in a large bowl, set aside. In a small bowl mix peanut butter, apple sauce and warm water (should be pudding-like). Pour wet mixture into the dry mixture and stir until it becomes doughy or you can’t really stir anymore. Kneed into a ball of dough with your hands, adding water if it’s too dry. It should have a texture similar to Play-Dough. Not so wet that it sticks to your hands and not so dry that it crumbles. Place onto parchment paper or a clean counter top sprinkled with flour. I prefer to place between two pieces of parchment. Roll until about a 1/4 inch thick or desired thickness. Be sure it’s even throughout. Cut into a grid using a pizza cutter, or if you prefer, cut into shapes using your favourite cookie cutter. Bake for 15-20 minutes or until golden brown. We prefer ours slightly chewy. If you would like a crunchier cookie we recommend you bake at a lower temperature for a longer time. Let cool before serving.
